Cornmeal Blueberry Muffins

Bake Temperature: 400 degrees


1 cup flour      2 tsp. baking powder         1 cup buttermilk
2/3 cup cornmeal             ½ tsp baking soda           ¼ cup melted butter
1/3 cup sugar                 ½ tsp salt             1 1/3 cup blueberries
3 eggs
Instructions: Combine the flour, corneal, sugar, baking powder, baking soda, and salt. In a separate bowl mix together the beaten eggs, buttermilk, and melted butter. Combine the two mixtures until just moist. Fold in the blueberries and spoon into sprayed muffin pans. Bake at 400 degrees for 20 minutes. Creates about a dozen muffins.
